Ingredients:
500ml double cream (semi whipped)
3 gelatine leaves
100ml boiling water
100 ml Crème de Menthe
75 g icing sugar
Chocolate ganache to finish the top
Method:
Whip the sugar and cream half way, add liquor and mix gently
Soak gelatine in cold water than dissolve in hot water
Mix together with cream, pour into moulds
Chill until set
Finish off with ganache
